VINE :
This wine is a blend of two noble and generous varieties: the Cabernet and the Côt (Malbec). This vine is a registered trademark.
SOIL :
The soil is of “perruche” type made up of clay-with-flints with a certain proportion of silica and gravels. Most of the parcels are in “premiere côte” having an excellent aspect and a rather important slope allowing the flow of exedent of water.
THE WINEMAKING PROCESS :
The greatest care is taken to protect the grapes from damage during the harvest. A sorting is realised before the setting in press. The fermentation is of “traditional” type. Everyday, a fermented must is pumping over to obtain a nice structure and more tannins. The fermention with the grape lasts nearly fifteen days.
CHARACTERISTICS:
This wine is a semi-guard, well balanced, structured, round, velvet and extremely elegant with a deep colour and a great bouquet. This wine will suit red meat and cheese. Serve at 14-16°C and could be used in seven years time.
