VINE :
Old Touraine vine, this wine has a new noble renown due to a lack of regularity in the past. The vine comes from Cahors called Malbec. The density of plantation is 6500 vine stocks per hectare. The average yields are 60Hl/Ha, hardly one litre of grape per vine stock.
SOIL :
The soil is of “perruche” type, made up of clay-with-flints with a certain proportion of silica and gravels. Most of the parcels are in “premiere côte” having an excellent aspect and a rather important slope allowing the flow of exedent of water.
THE WINEMAKING PROCESS :
The greatest care is taken to protect the grapes from damage during the harvest. A sorting is realised before the setting in press. The fermentation is of “traditional” type. Everyday, a fermented must is pumping over to obtain a nice structure and tannis. The fermentation with the berries lasts about fifteen days.
CHARACTERISTICS :
The côt is a semi-guard wine, well balanced, structured, round, velvet with a deep colour and a great bouquet. This wine will harmoniously pair with red meat and cheese. Serve at 14-16°C and drink it from two to seven years time.
AN AGREEMENT HAS BEEN MADE WITH QUALIFIED LABORATORY TO SUPERVISE ALL MY WINES
